Grated Carrot Salad

This grated carrot salad packs up so well and is a favorite to bring to work for lunch.

2-3 grated carrots
1 spring onion diced thin
4-5 leaves thai basil cut into ribbons
1-2 Tablespoons fish sauce
1-2 Tablespoons rice wine vinegar (lime juice is a good stand in)
1 Tablespoon white sugar
pepper
1-2 teaspoons gochujang
2-3 Tablespoons olive oil

For salad -
favorite lettuce 2-3 cups
1 cup chilled cooked rice noodles
(optional and delicious additions - radishes, snow peas and mint)

In the bottom of a large bowl add fish sauce, rice wine vinegar, white sugar, gochujang, and pepper. Whisk in olive oil. Once all combined add in the vegetables and toss to combine.

To make your salad to pack for lunch add carrot salad to the bottom of a jar. Layer in cold rice noodles and top with lettuce. To enjoy dum into a bowl and stir together.
