Lemon and Dill Roasted Daikon Radishes

Roasted radishes take on a bright and crispy quality that makes a perfect side to grilled chicken or fish. The leftovers also were a delicious addition to a quick salad the next day.

We found this recipe here and swapped out the agave and used Agritopia honey instead. The purple daikons are large and we just used one, but you could easily substitute a bunch of your favorite radishes in this recipe.

1 daikon radish, but into quarter sized pieces
2 Tablespoons olive oil
2 teaspoons lemon juice
1 teaspoon lemon zest
2 teaspoon honey
2 Tablespoons fresh chopped dill + small amount for garnish

Preheat oven to 400º. In a medium bowl combine olive oil, lemon juice and zest, honey, salt and dill. Toss the cut radishes in the mixture and spread evenly on a baking sheet. Roast for 15-20 minutes until tender and slightly crispy. Rotating the pan 1/2 way through cooking helps to evenly brown and cook. Remove from the oven and garnish with a few more sprigs of dill if you like.
