Easy roasted veggie pasta

Roasting fresh zucchini and tomatoes is a delicious way to add a touch of excitement to a weeknight pasta dish. Simply seasoned with olive oil, salt, and pepper, roasting brings about a sweet, caramelized flavor to the vegetables that makes for a simple and delicious meal.

To make this dish, we start by roasting diced zucchini, sliced onions, and halved cherry tomatoes until soft and slightly charred. You can add a garlic clove and a few sprigs of rosemary.

While the vegetables are roasting, cook your pasta of choice and reserve some of the starchy pasta water. Toss together the roasted vegetables, pasta, and some grated Parmesan cheese, along with a splash of pasta water to bring everything together. Top with chopped fresh basil.
